Mornings can be a difficult time of the day to nourish yourself, yet breakfast is one of the most important meals. After a night of fasting your body needs to refuel so that you can embrace the day ahead. Weekdays are usually a fairly rushed affair in our household, with 1-2 children that need to go to school and a deadline to be there by 9am, I tend to find that often by 10am I realise I haven’t eaten any breakfast yet! (coffee doesn’t count as breakfast, sadly).
I am often still tending to the needs of Mister-One and Mister-Four so a quick and easy breakfast is my only choice. Enter the smoothie bowl! Fun to make (and involve the children) as well as nourishing, and you can get as creative as you like with flavours. Recently I whipped up this lovely Acai Bowl for breakfast and it was so delicious I thought I would share the recipe. It even recieved the big tick of approval from Mister-One – who happily ate it as his second breakfast!
Ingredients
2 ripe bananas (chopped and frozen)
2 packets frozen Acai Berry puree (I used Sambazon)
A handful of frozen blueberries
1 tsp Lucuma powder (optional)
1 Tb hemp seeds (optional)
1/3 cup oat milk
Place all ingredients in a blender and blend on high for 1-2 minutes (note: the consistency is quite thick so you may need to use a plunger to assist with blending).
Once smooth, pour into a bowl and top with:
1 Tb peanut butter
1/2 fresh banana, sliced
1/4 cup dried mulberries
1 Tb hemp seeds
